Overview

“Tableja de Binsoy” refers to Jagna’s local method of making tableya — Filipino drinking-chocolate tablets made from roasted, ground, and molded nibs of fermented, 100% pure cacao beans, without additives. Production follows the general tableya process (fermenting, drying, roasting, and grinding cacao beans) but is distinguished locally by molding the paste with a “binsoy” — a local knife — rather than the hand-rolling or pressing methods used elsewhere in the Philippines; other sources describe the resulting pieces as small, cone-shaped tablets. The product is traditionally used to prepare sikwate, a Filipino hot chocolate drink taken in the morning or afternoon.
